The funny thing is, that wasn’t always the case.
There are tales of lobster being so plentiful that the tide would sometimes pile them up on the beach. Yes, lobster was plentiful … yet so different from most settlers’ normal diets as to be seen as distasteful. So much so that, in those early years, lobster was considered a poor person’s food, fed mainly to prisoners and indentured servants. Some servants even stipulated in their contracts that they not be forced to dine on lobster more than three times a week!
Now, of course, the tables have turned. Lobster is a popular entrée in both seafood shacks up and down the Maine coast and fine dining establishments everywhere. Whose mouth doesn’t water at the idea of a fresh, hot lobster roll?
